What were the most significant battles of the middles ages of Europe 1000-1400s

That is a very long list and depends entirely upon where in Eurasia you stand. There's a plethora just for England, never mind France or the Eastern Roman Empire or the Caliphate of Islam.
 
Any battles specifically ?
Depends on what exactly you are looking for. "Most significant battles of Europe" is very broad and will vary depending on which countries you are interested in. The Battle of Agincourt for instance didn't matter a bit to the Polish, while the Battle of Liegnitz isn't especially relevant to England.

Battles that change Europe like battle of Hastings as example
 
Probably the Battles of Tours, Liegnitz, and Hastings, as well as the Fall of Constantinople. Maybe the Fourth Crusade's battle in Constantinople. Las Navas de Tolosa, maybe?
 
Tours was after OP's time frame, but if I could make a shameless selfplug, the time line in my signature deals with the fallout of an Arab victory to that battle.
 
Battles that change Europe like battle of Hastings as example
Hastings did not change "Europe". It changed England and possibly France. I doubt anyone in Sweden or Hungary was ever seriously concerned about events there in 1066.

On that condition, there's really only a couple:
- Whatever battle decided the 1st Crusade.
- The battles involving the Mongols in 1240-1 (more for the image they created of invincibility than a direct impact on European politics)
- Fall of Constantinople 1453.

Not many others I can think of that impacted the whole continent especially much.

The Battle of Bouvines is a comparatively important battle in that it included the King of France, King of England, and two rival claimants for Holy Roman Emperor.

France's victory allowed Philip Augustus to end Jon of England's attempts to reconstitute the Angevin Empire, and Emperor Otto was soon deposed by Frederick II who had allied with Philip. Might not have made an impact in eastern Europe, but had great affects in France and the Holy Roman Empire which might be as big as you are going to get.

About Constantinople, why do people consider 1453 more significant than 1204? The former was the inevitable conclusion of the rise of the Ottomans. The specific siege could have failed, yes, but they would have just tried again in a few years. The Fourth Crusade capture of Constantinople, on the other hand, wrecked the Byzantine Empire to the degree that the Ottomans could rise and was a major turning point in the balance of power in the Eastern Mediterranean.

Nothing is inevitable. Ottoman rise and ascendency still was able to be halted as Timur showed 51 years earlier. The Varnan Crusade could have lead to the collapse of Ottoman Power in the region in the short; giving time for Italian states to increase their grips on Greece and Constantinople.
 
Civitate, 1053. Solidified the East-West Church Schism, ended Byzantine control over Italy for good, kickstarted Robert Guiscard's career, and arguably ignited the Investiture Controversy. Perhaps it also emboldened William of Normandy into invading England.
